"almost in season" grilled asparagus and corn salad

The problem with this recipe is the ingredients are never all in season at the same time. | |
Best as a summer salad with imported asparagus but works in other seasons as well. | |
4 Large Tomatoes | |
6 Ears of Corn | |
2 Bunch Asparagus | |
1/2 Cup Extra Virgin Olive Oil | |
1/4 cup Balsamic Vinegar | |
4 TBSP Chopped Basil | |
2 TBSP Chopped Mint | |
Remove husks and silk from corn. | |
Drizzle corn and aparagus with olive oil, salt and pepper to taste. | |
Grill the corn directly on the grill until done, turning regularly | |
Grill the asparagus until just tender | |
Combine all remaining ingredients and toss. | |
Chill and serve. |
