Chili is one of my favorite dishes, and after years of tinkering this is my go-to recipe. While I definitely appreciate more intricate recipes, this Frankensteinian combination of Heston Blumenthal and Alton Brown gives me the depth of flavor and short cooking time I'm after.

Ingredients

Spiced Butter:

  • 2 Tbsp olive oil
  • 1.5 tsp ground cumin
  • 1.5 tsp chili powder
  • 1.5 tsp cayenne pepper
  • 1.5 tsp smoked paprika
  • 1 tsp ketchup
  • 0.5 tsp Worcestershire sauce
  • 0.5 tsp Marmite (optional umami bomb)
