Steak Chow Mein with Vegetables

Steak Chow Mein with Vegetables

Ingredients

  • Chow mein noodles (prepare according to package instructions)
  • Leftover grilled steak, thinly sliced against the grain
  • Broccoli, cut into small florets
  • Champignon mushrooms, sliced
  • Bell peppers, sliced
  • Green onions, chopped (reserve some green parts for garnish)
  • 2-3 cloves garlic, minced
  • 2 tablespoons high-heat cooking oil (peanut or vegetable)

Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cooking wine
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil (optional)

Instructions

  1. Prepare noodles according to package directions, drain and set aside.

  2. Mix all sauce ingredients in a small bowl and set aside.

  3. Heat wok over high heat. Add oil and swirl to coat.

  4. Add broccoli first and stir-fry for 2-3 minutes until bright green.

  5. Add mushrooms and stir-fry for 2-3 minutes until they begin to brown.

  6. Add bell peppers and stir-fry for 1-2 minutes until slightly softened.

  7. Add minced garlic and most of the green onions (except reserved greens for garnish). Stir-fry for 30 seconds until fragrant.

  8. Add sliced steak and toss briefly just to warm through (1 minute).

  9. Add cooked noodles to the wok.

  10. Pour sauce over everything and toss quickly to coat all ingredients with the sauce (1-2 minutes).

  11. Garnish with reserved green onion tops and serve immediately.

Notes

  • Keep the heat high throughout cooking for authentic wok flavor.
  • The entire cooking process (after prep) should take only about 10 minutes.
  • Stir continuously to prevent burning.
