#Tofu Bolognese - Yummy, vegan bolognese

| Tofu, natural | 80 g |
| Soy sauce, dark | 2 tablespoons |
| Water | 1 tablespoon |
| Lemon juice | 1 teaspoon |
| Olive oil | 1 tablespoon |
| Shallot diced | ½ a piece |
| Tomatoes, sieved | 125 g |
| Vegetable broth | |
| Paprika powder, sweet | |
| Parsley | |
| Optional: Mixed Vegetables | 100 g |
##Preparation

Crumble tofu (mash with a fork) and mix with the soy sauce, water, and lemon juice well and let them go for min. 1h.

In a small saucepan, heat the oil and fry the onion. Add the tofu and optionally approx. 100g of diced vegetables (peppers, mushrooms, carrots, etc.) Fry over medium heat for a few minutes.

Add the sieved tomatoes and the vegetable broth and parsley. Simmer the whole bolognese for about another 3-5 minutes.
Serve with whole wheat pasta.
