# Airbnb Almond Cookies | |
sooo.. i would recommend searching for a ricciarelli recipe that is a much more manageable size then the one i have. most of the recipes I have found on the internet have them as a diamond shaped cookie that is flat. i like to make these with a small muffin scoop so they are domed and you get the balance between crunchy and chewy. or.you can play around with amounts of these | |
## ./configure: | |
* 1 pound: almond meal | |
* 1.25 pounds: powdered sugar | |
* 1/2 Cup: egg whites | |
* 1/3 Tablespoon baking powder | |
* to taste: salt | |
* 4 Tablespoons: almond extract | |
* to taste: orange extract/zest. | |
* 2 Tablespoons: vanilla extract | |
basically. i would start with these amounts (however, you may need to tweak it after the first batch to get taste, texture, and lift correctly.) I just reduced by recipe by 1/18th so a few things like the extracts may need to be adjusted. | |
## make | |
Beat egg whites until fluffy white peaks | |
add almond meal and powdered sugar | |
add salt, baking powder, vanilla, almond extract and orange zest | |
mix until it just comes together | |
the dough should be a thick and sticky (similar to marzipan) | |
## sudo make install | |
5. bake at 350 for 15 minutes….check for color..may need a little longer or a little less depending on size and the type of oven you have. |
