Guacatillo Salsa | |
Ingredients: | |
5 tomatillos | |
1/2 jalapeño | |
1/4 of a white onion | |
2 cloves of garlic | |
6 sprigs worth of cilantro | |
juice from 1-2 limes | |
1 avocado | |
salt | |
pepper | |
Directions: | |
Cut the tomatillos into quarters and the jalapeño in half. Roast under broiler on a cookie sheet until charred. Remove and let cool for a few minutes. | |
Add tomatillos, jalapeño, onion, garlic, cilantro & lime juice to blender or food processor and blend together. Add avocado, salt & pepper (adding cumin and red pepper flakes also works well for variation) to taste and blend until smooth. If you're generous w/ the lime juice & store in the fridge with a close layer of saran wrap to keep out the air, it keeps for about a week. |
